Mediterranean lemon-herb salmon and roasted vegetable sheet-pan dinner is a healthy, easy meal that cooks in about 35 to 40 minutes… It’s one of the best recipes yoi will enjoy, let’s see how to prepare

Preparation time: 15 minutes

Cooking time: 20–25 minutes

Serves: 2 people

Cuisine: Mediterranean

Ingredients

For the salmon

  • 2 salmon fillets, approximately 120–150 g each
  • 1 tablespoon extra-virgin olive oil
  • Juice of half a lemon
  • 2 garlic cloves, finely chopped
  • 1 teaspoon dried oregano
  • 1 tablespoon chopped fresh parsley
  • Black pepper, to taste
  • A small pinch of salt, if desired

For the vegetables

  • 1 medium courgette, sliced
  • 1 small red pepper, chopped
  • 1 small carrot, thinly sliced
  • 1 cup broccoli florets
  • 6–8 cherry tomatoes
  • 1 tablespoon olive oil
  • A pinch of black pepper
  • A little dried thyme

Method

Step 1: Prepare the oven

Preheat the oven to 200°C (180°C fan).

Line a baking tray with baking paper.

Step 2: Season the vegetables

Place the courgette, red pepper, carrot, broccoli and cherry tomatoes on the tray.

Add the olive oil, black pepper and thyme. Toss everything together until lightly coated.

Roast for 10 minutes.

Step 3: Prepare the salmon

In a small bowl, combine the olive oil, lemon juice, garlic, oregano, parsley and black pepper.

Place the salmon fillets on the tray beside the vegetables. Spoon the lemon-herb mixture over the fish.

Step 4: Bake until tender

Return the tray to the oven and bake for another 12–15 minutes, depending on the thickness of the fillets.

The salmon should reach an internal temperature of 63°C at its thickest point. The flesh should be opaque and separate easily with a fork.

Step 5: Serve

Arrange the salmon and vegetables on two plates.

Finish with fresh parsley and a squeeze of lemon.

Serve with a small portion of brown rice or quinoa if desired.

The secret to its flavour

The combination of lemon, garlic and oregano gives the salmon a fresh Mediterranean aroma without requiring heavy sauces. Roasting the vegetables brings out their natural sweetness, while the olive oil helps carry their flavours.

Nutritional benefits

  • Salmon: Provides protein and omega-3 fatty acids.
  • Broccoli and carrots: Supply fibre, vitamins and beneficial plant compounds.
  • Olive oil: Provides predominantly unsaturated fats.
  • Lemon and herbs: Add freshness and flavour without relying on excess salt.

A healthier cooking tip

Choose fresh or plain frozen salmon rather than heavily salted or seasoned products. Use olive oil in measured quantities, and keep added salt modest.

Serving suggestion: A simple cucumber, lettuce and lemon salad makes a refreshing accompaniment.

Food safety note: Anyone managing a medical condition or following a prescribed diet should adapt portions and ingredients to their clinician’s advice.
